Low Carb Broccoli Salad

Yields: 4 servings

Ingredients:

-2 heads of broccoli cut into bite size pieces

-½ cup of shredded cheddar cheese

-¼ of a red onion, thinly sliced

-½ cup of chopped celery

-½ cup of toasted sliced almond

-4 slices of bacon cooked and crumbled

-2 tbsp of freshly chopped chives

Directions:

• In a medium pot bring 4 cups of salted water to a boil. While waiting for water to boil, prepare a large bowl of ice water.

• Add broccoli florets to the boiling water and cook until tender 1-2min. Remove florets with a slotted spoon and place in prepared bowl of ice water. When cool drain florets.

• In a medium bowl, whisk to combine dressing ingredients. Season to taste with salt and pepper.

• Combine all salad ingredients in a large bowl and pour over dressing. Refrigerate until ready to serve.

Dressing:

-2/3 cup of mayonnaise

-3 tbsp of apple cider vinegar

-1 tbsp of dijon mustard

-Kosher salt

-Fresh ground black pepper.
