Vegetarian Chili

An excellent vegetarian option- full of flavor!

Ingredients

1 tbsp olive or vegetable oil
½ cup onions, coarsely chopped
3 cloves garlic, minced
2 cups green peppers, chopped
28 oz can whole tomatoes, mashed
12 oz can of tomato paste
1 cup water
15 ½ oz can kidney beans, rinsed and drained
2 cups carrots, grated
1 cup zucchini, grated
1 large 8 oz granny smith apple, grated
¼ tsp pepper
½ tsp crushed red pepper
1 tbsp chili powder

Cooking Directions

Cook onions, garlic and peppers in oil over medium heat for 4-8 minutes or until tender. Add the can of tomatoes, the can of tomato paste and the water. Mix in the kidney beans, carrots, zucchini and apple. Finally, add the seasonings and mix thoroughly. Once all the ingredients are simmering, reduce the temperature to low and simmer for 30-45 minutes. Enjoy!
