Meat Loaf (A Calorie Trimmed Classic)
Meat loaf is a delicious, high-protien dinner choice, and this recipe is a favourite! No one will notice that this is a leaner, calorie-trimmed version of classic meat loaf.
Ingredients
- 1 egg white or 1/4 cup refrigerated or frozen egg product, thawed
- 1/4 cup Ketchup
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped celery
- 1/4 cup shredded carrot
- 1/4 cup fine dry bread crumbs
- 1/4 cup skim milk
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1 lb. lean ground beef
- 2 tablespoons ketchup
Instructions
- In a large mixing bowl combine egg white or egg product, the 1/4 cup ketchup, the onion, celery, carrot, bread crumbs, milk, pepper and salt. Add ground beef and mix well.
- In a shallow baking pan or dish pat the meat mixture into a 7x3x2-inch loaf.
- Bake in a 350 degree oven for 45 to 50 minutes or until no pink remains. Spread the 2 tablespoons over top of meat loaf. If desired, serve with additional ketchup. Makes 6 servings.
Notes
Mexican-Style Meat Loaf: Prepare as above except substitute SALSA for the ketchup and add 1 teaspoon chili powder with the bread crumbs. If desired, serve with additional salsa.
