Zesty Roasted Vegetables

A new way to dress up your veggies!

Ingredients

½ lb (225g) whole button or crimini mushrooms
1 pkg. (340g) baby carrots
1 onion, peeled, cut into ½ inch-thick wedges
1 large red, green or yellow bell pepper, cut into 8 strips
1/3 cup Calorie- Wise Zesty Italian Dressing
1/3 cup Light Parmesan Grated cheese, divided

Directions

Preheat oven to 450 degrees F. Line 15x10x3/4-inch baking pan with foil; spray with cooking spray. Set aside.

Toss vegetables with dressing and ¼ cup of the cheese; spread into prepared pan.

Bake 28 to 30 minutes or until vegetables are tender, stirring after 15 minutes. Sprinkle with remaining cheese.

Notes

Makes 4 servings. Count each serving as 1 restricted vegetable.
