Couldn't-be-simpler Chickpea Salad

Quick & easy, not to mention delicious, this salad is packed with protein and full of flavour. Ever wonder what to do with that lonely can of chickpeas sitting in the back of the cupboard? Wonder no further!

Ingredients

540 mL can of drained and rinsed chickpeas
2 tomatoes, chopped
1 peeled & chopped cucumber
1/2 thinly sliced red onion
1 tbsp olive oil
2 tbsp fresh lemon juice
1/4 tsp salt

Instructions

Combine the can of drained & rinsed chickpeas with the chopped tomatoes, cucumber and red onion.

Add the olive oil, lemon juice and salt.

Toss to combine.

Notes

Makes 4 servings. Count each serving as 1 protein & 1 fat.
