Easy Bistro Chicken

A delicious, healthy take on a bistro classic!

Ingredients

nonstick spray coating
3 cups sliced fresh mushrooms
1 medium onion, chopped
1 can (540 mL) diced tomatoes, undrained (i.e. Aylmer Accents Petite Cut Tomatoes with Garlic and Olive Oil)
1/4 cup light Italian dressing
3 Tbsp. tomato paste
4 small boneless skinless chicken breasts (1 lb.)
1 cup shredded cheese
2 Tbsp. bacon bits (optional)

Instructions

Heat nonstick spray coating in large nonstick skillet on medium-high heat. Add mushrooms and onions; cook 5 minutes, stirring occasionally. Stir in tomatoes with their fluid, the dressing and tomato paste.

Add chicken; cover. Reduce heat to medium-low. Simmer 12 minutes or until chicken is cooked through.

Sprinkle with cheese and bacon bits; simmer, uncovered, 5 minutes or until cheese is melted. Serve over a small amount of whole wheat pasta, if desired, or with a heap of vegetables!

Notes

Makes 4 servings. Count each serving as: 4 protein (group 6) * If using bacon bits, also count as 1 fat (group 7)
