Spicy Scallops with Lime and Chile
This is a nice zingy recipe for scallops.
Ingredients
- 16 large scallops
- 1 tsp crushed garlic
- 1 tsp grated fresh ginger
- 1 bunch scallion, sliced finely
- finely grated zest of 1 lime
- 1 small red chile, deseeded and sliced
- 3 tbsps lime juice
Instructions
- Trim the scallops to remove any black intestine, then wash and pat dry with kitchen towels. Separate the corals from the white parts, then slice each white part in half horizontally, making 2 rounds.
- Spray pan with Pam or a spritz of olive oil. Add the garlic and ginger, and stir-fry for 1 minute, without browning. Add the scallions and stir-fry for 1 more minute.
- Add the scallops and continue stir-frying over a high heat for 4-5 minutes. Stir in the lime zest, chili and lime juice, and cook for an additional minute.
- Serve the scallops hot, with the juices spooned over them, accompanied by lime wedges.
Notes
Makes 2 servings. Each serving (8 scallops each) counts as 2 protein.
