Baked Salmon with Spinach, Tomatoes & Mushrooms
A deliciously light salmon recipe loaded with flavour!
Ingredients
- 4 salmon fillets (about 1 lb or 450 g)
- 2 cups chopped fresh spinach leaves
- 1 cup sliced mushrooms
- 1 tomato, chopped
- ¼ cup sun-dried tomato dressing (i.e. Kraft)
Directions
1) Heat oven to 375-F. Place fish fillets, skin sides down, in 13x9-inch baking dish sprayed with cooking spray.
2) Mix remaining ingredients until blended; spoon over fish.
3) Bake 20 to 25 minutes or until fish flakes easily with a fork.
