Pork Tenderloin Bruschetta
A meaty twist on delicious bruschetta!
Ingredients
1 pound pork tenderloin, cut into ¾” rounds
2 tbsp. seasoned bread crumbs (you can buy them seasoned or add Italian seasoning to regular bread crumbs)
Bruschetta mixture (buy it ready made or make your own: chopped tomatoes, garlic, onion, parsley, olive oil, salt, pepper)
Egg (beaten)
Cooking Directions
Preheat oven to 350 degrees. Spray baking tray with Pam.
Dip tenderloin in egg mixture. Coat with seasoned bread crumbs and place on baking tray.
Top each round with a tablespoon of bruschetta.
Cover with foil. Bake approximately 30 minutes (depending on the thickness of the tenderloin)
