Quinoa Spinach Bake

Quinoa is a gluten-free whole grain that's high in dietary fibre. This dish is a delicious way to serve quinoa!

Ingredients

1 lb fresh spinach, cooked or 3/4 cup frozen chopped spinach (1 container)
2 tsp olive oil
2 onions, chopped
4 cloves garlic, minced
1 tbsp packed fresh thyme
1 tsp finely chopped fresh rosemary
1/2 tsp (or more to taste) crushed red pepper flakes
2 cups cooked quinoa --> 1 cup uncooked quinoa with 2 cups non-fat chicken, beef or veggie broth as the liquid instead of water. Cook the quinoa for 15 minutes (according to directions).
1 cup non-fat cottage cheese
1/4 to 1/2 tsp freshly ground pepper
2 eggs, lightly beaten
non-stick cooking spray
handful of bread crumbs (or crushed-up protein cereal)

Instructions

Preheat oven to 350 degrees-F

Spray an 8x8 pan with non-stick cooking spray.

Sprinkle bread crumbs (or cereal) lightly on bottom of dish.

In a heated pan, saute onion, garlic and herbs until transparent.

Add spinach, eggs, cottage cheese and cooked quinoa to pan and mix until well combined.

Pour mixture into baking dish, and bake in oven 60-70 minutes.

Notes

Makes 8 Servings.

Count 1 serving as 2 proteins (group 6) and 1 carbohydrate (group 5).
