Three Bean Chili

This delicious vegetarian chili is high in protein and fibre!

Ingredients

1 can (540 mL) chili-style stewed tomatoes, undrained
1 can (540 mL) black beans, drained, rinsed
1 can (540 mL) red kidney beans, drained, rinsed
1 can (540 mL) pinto beans, drained, rinsed
1/2 cup salsa
1 tsp chili powder
1 tsp ground cumin
1 cup tex mex shredded cheese
1/2 cup light sour cream
1/4 cup chopped fresh cilantro

Instructions

1) Combine tomatoes, beans, salsa and seasonings in large saucepan; mix well.

2) Bring to boil. Reduce heat to medium-low; cover. Simmer 10 minutes, stirring occasionally.

3) Serve topped with cheese, sour cream and cilantro.

Notes

1 serving = 1 cup.

Count each 1-cup serving as 3 proteins (group 6).
