Thai Lettuce Bundles

This low calorie appetizer will be a sure-fire hit with your friends and family!

Ingredients

¼ cup water
¼ cup Hoisin sauce
1/3 cup peanuts, chopped
2 cups bean sprouts
2 grated carrots
2 green onions, finely chopped
1 tbsp Calorie - Wise Mayonnaise type dressing
1 head romaine, Boston or iceberg lettuce

Instructions

Add water to Hoisin sauce and heat just to boiling, add peanuts. Set aside.

Mix remaining ingredients, except lettuce. Gently remove leaves from the head of lettuce. Remove tough centre stem; divide larger leaves in half lengthwise.

Place 1 tbsp mixture on lettuce leaf; roll firmly but gently as not to tear. Serve with hoisin/peanut sauce.

Notes

Variations: Add tuna or chicken for a more filling appetizer and count it accordingly in Group 6.

Makes 12 servings of 2 bundles
