Lisa's Baked Salmon

This recipe is from Maureen's daughter in law who lives in Vancouver.

Ingredients

  • 1 lb salmon fillet
  • 1/2 cup fat free plain yogurt
  • 2 tbsp fat free mayonnaise
  • 1 tbsp capers, chopped
  • 2 tbsp sun dried tomatoes drained of oil, chopped
  • Fresh ground pepper

Instructions

  1. Preheat oven to 350 degrees
  2. Mix all ingredients (yogurt, mayonnaise, capers, sun dried tomatoes) in a bowl
  3. Place salmon fillets in a baking dish that has been sprayed with Pam
  4. Sprinkle with pepper
  5. Top salmon with yogurt mixture
  6. Let sit for 20 minutes
  7. Place in oven and bake for 12 to 18 minutes or until the salmon flakes with a fork
