Lisa's Baked Salmon
This recipe is from Maureen's daughter in law who lives in Vancouver.
Ingredients
- 1 lb salmon fillet
- 1/2 cup fat free plain yogurt
- 2 tbsp fat free mayonnaise
- 1 tbsp capers, chopped
- 2 tbsp sun dried tomatoes drained of oil, chopped
- Fresh ground pepper
Instructions
- Preheat oven to 350 degrees
- Mix all ingredients (yogurt, mayonnaise, capers, sun dried tomatoes) in a bowl
- Place salmon fillets in a baking dish that has been sprayed with Pam
- Sprinkle with pepper
- Top salmon with yogurt mixture
- Let sit for 20 minutes
- Place in oven and bake for 12 to 18 minutes or until the salmon flakes with a fork
