Slow Cooker Beef Stroganoff

Ingredients:

-1 onion, sliced

-2 cloves garlic, crushed

-3 rashers bacon, diced

-500g beef stewing steak, cubed

-1 tsp smoked paprika

-½ C tomato paste

-1 C beef stock

-250g mushrooms, sliced

Method:

• Place all the ingredients in the slow cooker

•Mix

• Cook on Low for 6 – 8 hours or on High for 4 – 6 hours.

• Serve with sour cream!

Makes 6 servings; count each serving as 2 proteins and ½ fat (count an extra fat if using sour cream).
