Fragrant Beef Koftas with Raita
These koftas are delicious cooked on the barbeque!Ingredients:
- 350g (12oz) lean minced beef
- 4 green onions,finely chopped
- 2 tsp garam masala
- ½ tsp ground cumin
- 8 tbsp thick Greek yogurt
- 5cm piece of cucumber, grated and with excess water squeezed out
- 1 ripe tomato, finely chopped
- 1 garlic clove, crushed salt and freshly ground black pepper
Method:
- Soak 6 bamboo skewers in water for 20 minutes.
- Mix together the minced beef, green onions, garam masala, cumin and 2 tbsp of the Greek yogurt. Season to taste.
- Roll into 6 pieces, each about 7.5cm long. Push each one on to a bamboo skewer.
- To make the raita, mix the remaining Greek yogurt in a bowl with the cucumber, tomato, garlic and seasoning.
- Pre-heat the grill or barbeque to its hottest setting. Cook the beef koftas for 10-12 minutes on the grill rack, turning occasionally until nicely browned and cooked through.
- Serve with the raita and a crisp green salad!
