Fragrant Beef Koftas with Raita

These koftas are delicious cooked on the barbeque!Ingredients:

  • 350g (12oz) lean minced beef
  • 4 green onions,finely chopped
  • 2 tsp garam masala
  • ½ tsp ground cumin
  • 8 tbsp thick Greek yogurt
  • 5cm piece of cucumber, grated and with excess water squeezed out
  • 1 ripe tomato, finely chopped
  • 1 garlic clove, crushed salt and freshly ground black pepper

Method:

  1. Soak 6 bamboo skewers in water for 20 minutes.
  2. Mix together the minced beef, green onions, garam masala, cumin and 2 tbsp of the Greek yogurt. Season to taste.
  3. Roll into 6 pieces, each about 7.5cm long. Push each one on to a bamboo skewer.
  4. To make the raita, mix the remaining Greek yogurt in a bowl with the cucumber, tomato, garlic and seasoning.
  5. Pre-heat the grill or barbeque to its hottest setting. Cook the beef koftas for 10-12 minutes on the grill rack, turning occasionally until nicely browned and cooked through.
  6. Serve with the raita and a crisp green salad!
