Portobello Pizzas
Thanks to T.B. for this low-carb version of a fabulous favourite!!
Ingredients
• 2 Portobello mushroom caps, stem & gills removed
• Olive oil
• 1 Italian Turkey sausage or turkey pepperoni (or a combo)
• Finely chopped green or red peppers
• Pizza sauce
• Italian seasoning
• 1 oz. shredded mozzarella
Directions
Preheat oven to 425ºF.
Brush mushroom caps lightly with olive oil.
Roast in the oven for 15 minutes until brown and tender.
Meanwhile, cook turkey sausage if using.
Remove mushrooms from oven, spread pizza sauce in the hollow of the mushrooms, sprinkle with Italian seasoning & add cooked sausage and/or pepperoni and peppers, top with mozzarella.
Return to oven & bake until cheese is melted and bubbly. Enjoy!!
