Mock Mashed Potatoes
This is a delicious side-dish that's low-carb and packed with flavour! Thank you to N.D. for this great recipe.
Ingredients
• 1 small head of cauliflower
• ½ cup broth
• salt & pepper
• 3 tbsp parmesan cheese
Directions
1) Steam cauliflower in broth in a large pot. Test with fork after 10 minutes to see if tender.
2) Drain, mash with a potato masher.
3) Stir in cheese, salt & pepper.
4) Serve!
