Bacon Roasted Pumpkin Seeds

Don't throw away the seeds from your Jack O'Lantern - roast them for a delicious snack!

Ingredients:
1 large pumpkin
4 slices bacon
Salt

Method:
• Remove the seeds from the pumpkin.
• Rinse and drain the seeds and pat them dry.
• Spread the seeds on a rimmed baking sheet.
• Sprinkle them with salt.
• Cut the four slices of bacon into pieces and place them in the pan with the bacon.
• Bake the pumpkin seeds for 25 – 30 minutes at 375F, stirring and turning the seeds every 5 minutes, until golden and crunchy.
• Crumble the cooked bacon and mix it with the pumpkin seeds.

Count a tablespoon of the seeds as 1 fat.
