BBQ Portobello Mushroom and Sausage Pizzas

Ingredients:
8 large Portobello mushrooms, stems removed
2 tsp extra virgin olive oil
½ C pasta sauce – any flavor
½ C mozzarella cheese, grated
3 – 4 sausages, cooked and sliced

Method:
• Preheat oiled grill to medium high.
• Brush both sides of mushrooms with oil. Grill mushrooms, stem side down, for 4 minutes (being careful not to overcook). Turn and grill for another 4 minutes or until slightly softened.
• Top mushrooms with pasta sauce and sliced sausage. Sprinkle cheese over the top and grill, covered, for 5 minutes or until the cheese is bubbling.

Makes 4 servings of 2 mushrooms each; count each serving as 3 proteins and 1 fat.
