Marinated Pork Satay
Ingredients:
• 1 ½ lbs pork tenderloin (or chicken breast) cut into 1 inch cubes
• 2 tbsp butter
• 1 tbsp lemon juice
• Grated zest of 1 lemon
• ½ tsp Tabasco
• 3 tbsp grated onion
• 1 tbsp brown sugar
• 1 tsp coriander
• ½ tsp ground cumin
• ¼ tsp ginger
• 1 garlic clove
• ½ C soy sauce or Teriyaki sauce
Method:
Place pork tenderloin in shallow dish. Melt butter in saucepan and add remaining ingredients. Bring to a boil and simmer for 5 minutes. Pour over meat, cover and refrigerate overnight. Turn meat periodically (butter will congeal but don't worry). Remove meat from marinade (reserve) and put 5- 6 pieces on each skewer. Grill on BBQ, turning frequently, for 15 minutes (don't overcook!).
Reheat marinade (bring to a boil for 1 minute) and drizzle over meat if desired.
Serves 6. Count each serving as 3 protein. If you use the marinade as a sauce, also count as 1 fat.
