Mexican Chicken and Rice
This is a great spicy meal with cauliflower as the main player!Recipe courtesy of Elana's Pantry.
Ingredients:
2 tbsp olive oil
1 medium onion, diced,
1 C celery, finely diced
1 head cauliflower, trimmed
1 can green chilies, diced
4 boneless, skinless chicken breasts, grilled and diced into 1-inch pieces
1 tsp salt
Ground cumin, oregano and chili powder to taste
Optional sides:
1 avocado
Grated cheese
Salsa
Method:
? Heat olive oil over medium heat in a large skillet and sauté onion for 10 minutes or until soft.
? Add celery and cook for 5 minutes.
? Place cauliflower in a food processor and process until it is the texture of rice.
? Add cauliflower to skillet, cover and cook for 5 minutes until soft.
? Mix chilies and chicken into skillet.
? Stir in salt, cumin, oregano and chili powder.
? Serve, topping with avocado, cheese and salsa if desired.
Makes 4 servings; count each serving as 3 proteins and 1 fat. If using the avocado and cheese add an extra fat.
