Easy Vegetable Au Gratin

This a great side dish for your next dinner party! Roasting the vegetables gives them excellent flavour.

Ingredients

• 6 medium or 3 large tomatoes
• 2 zucchini
• 1 red onion
• 2 Portobello mushrooms
• 1 tbsp balsamic vinegar
• 1 tbsp olive oil
• 1 tsp each basil, oregano and rosemary
• 1 clove garlic – minced
• ¼ cup of breadcrumbs (optional)
• ½ cup freshly grated parmesan cheese (freshly grated melts better)

Directions

1) Cut vegetables into bite size pieces and place in a 9x13-inch baking dish sprayed with non-stick cooking spray.
2) Mix vinegar, oil, garlic and spices. Toss with vegetables.
3) Bake at 400ºF for 25 minutes.
4) Mix bread crumbs and parmesan cheese (if using). Sprinkle on top of vegetables after the 25-minute cooking time. Place in oven 5 more minutes until cheese is melted.
5) Serve.
