Mini Meatball Minestrone Soup
This is an easy soup that is full of flavour and filling as can be!
Ingredients
1 28-oz can tomatoes, cut up
2 cups shredded cabbage
4 cups beef broth
2 small zucchini
2 ribs celery
1 medium onion
½ cup dry red wine
2 tbsp snipped parsley
1 tsp dried oregano
1 tsp basil
Bring these ingredients to a boil and them simmer for 15 minutes.
FOR MEATBALLS:
1 beaten egg
¼ cup milk
1 tsp Worcestershire sauce
1 lb extra lean ground beef
2 tbsp grated parmesan cheese
Roll meat mixture into small balls. Brown meatballs in a heated skillet before adding them to the soup. Once meatballs are added, simmer soup for 15 minutes more.
