Rustic Apple Cake
Cakes don’t need to be full of flour!! This lower carb recipe can be made with any baking apple you like!
Ingredients:
• 4 Golden Delicious apples (approx. 900g)
• ½ cup all-purpose flour
• 1/3 cup granulated sugar
• 1 Tbsp baking powder
• ½ tsp grated lemon zest
• ¼ tsp salt
• ½ cup milk
• 2 eggs
• 2 Tbsp butter, melted and cooled
• ½ tsp vanilla
• 1 Tbsp icing sugar
Directions:
1. Peel, quarter and core apples; slice crosswise into 1/8 inch (3mm) thick slices. Set aside.
2. In large bowl, whisk together flour, sugar, baking powder, lemon zest and salt.
3. Whisk together milk, eggs, butter and vanilla; pour over dry ingredients and stir gently to combine. Fold in apples. Pour into greased and parchment paper lined 9 inch (2.5L) springform pan.
4. Bake in 425°F (220°C) oven until top is puffed, golden and firm to the touch, about 40 minutes. Run knife around edge of cake; let cool in the pan on a rack for 10 minutes. Release from pan; let cool completely. Dust with icing sugar just before serving.
Makes 8 servings; count each serving as 1 carbohydrate and 1 fruit.
