Zucchini Tots
These tasty treats are a perfect hand around!
Ingredients:
1 C grated zucchini
1 egg
¼ C grated sharp cheddar or parmesan cheese
¼ onion, finely chopped
½ C seasoned breadcrumbs
Method:
? Preheat oven to 400F.
? Place grated zucchini in a clean dish towel and wring out the excess water.
? Mix together all the ingredients.
? Spoon the mixture into an oiled mini muffin tin and press down with a spoon.
? Bake at 400F for 16 – 18 minutes until browned.
Makes 12 mini muffins.
Count 1 serving (4 tots) as 1 protein and ½ carb.
Low carb version: Substitute ½ C almond flour (ground almonds) and ¼ tsp oregano for the breadcrumbs.
If using ground almonds, count 1 serving (4 tots) as 1 protein and 1 fat.
