Chicken Breasts with Crispy Posh Ham

This is a quick, easy way to prepare chicken with a lot of flavor! The crisp prosciutto is a great complement to the chicken and flattening the chicken breasts makes for really quick cooking!

Ingredients
2 sprigs of fresh thyme (or about a teaspoon of dried)
2 chicken breasts
1 lemon
Salt and pepper
2 slices of prosciutto (or parma ham)
Olive oil

Cooking Directions
Pull the thyme off of the stalks (if using dried thyme, omit this step). Lay the chicken breasts out on your work surface and score the underside of the breasts in a criss-cross pattern with a small knife. Season with pepper and thyme and grate some of the lemon zest over them.
Lay a piece of prosciutto over each piece of chicken. Place a square of plastic wrap over each breast and give them a few ‘bashes' with the bottom of a heavy pan until they are about ½ inch thick.
Put a frying pan over medium heat. Remove the plastic wrap and drizzle the chicken with olive oil before carefully transferring the chicken, prosciutto side down, into the pan. Drizzle the other side with olive oil. Cook for 3 minutes on each side, turning halfway through, giving the prosciutto and extra 30 seconds at the end to crisp up.
Either serve the chicken breasts whole or cut them into thick slices. Serve with lemon wedges for squeezing over and green veggies or a crunchy salad.
