Hamburger Soup

This deliciously hearty soup is very filling and perfect for a cold day!

Ingredients

  • 1 1/2 lbs lean ground beef

  • 1 medium onion - finely chopped

  • 1 28-oz can diced tomatoes

  • 2 cups water

  • 3 cans beef consomme

  • 1 can tomato soup

  • 4 carrots, finely chopped

  • 1 bay leaf

  • 3 stalks celery, finely chopped

  • 8 tablespoons barley

Instructions

  1. Brown meat with onion, drain well.

  2. Combine all ingredients in a large pot.

  3. Cover and simmer at least 2 hours.

Notes

Makes 12 servings.

Exchanges: Count each serving as: 2 protein (group 6) ½ carbohydrate (group 5)
