Asian Slaw
This is a great new twist on traditional coleslaw.
Ingredients
• 12 cups packed coleslaw mix
• 1 can (10 fl oz/284 mL) mandarin orange segments, drained
• ½ cup Light Catalina salad dressing
• ¼ cup Light mayonnaise
• 2 Tbsp. soy sauce
• 1/3 cup peanuts
Directions
1) Toss coleslaw mix and oranges in large bowl.
2) Mix dressings and soy sauce in small bowl. Pour dressing mixture over coleslaw mixture; toss gently until well coated.
3) Cover and refrigerate 1 to 2 hours or overnight. Sprinkle with peanuts just before serving.
Exchanges
Makes 12 servings, 1 cup each.
Count each serving as 1 serving of fat (group 7) and 1 serving of fruit (group 4).
* Make-ahead: Assemble this slaw up to one day ahead of time. Not only will you save time, you'll allow all the flavours to combine.
