Sausage and Broccoli

An easy and tasty dinner!

Ingredients

1 large head of broccoli or bundle of broccoli rabe, about 1 ¼ to 1 ½ pounds
1 tablespoon extra-virgin olive oil
1 pound bulk Italian hot or sweet sausage, in crumbles or small pieces

Directions

Cut the broccoli into bite-sized florets or trim the ends of the broccoli rabe and cut into 3 inch pieces.

Bring 2 inches water to a boil in a high sided skillet. Add the broccoli or broccoli rabe and simmer for up to 10 minutes depending on how you like your broccoli cooked. Drain.

Return skillet to the stove and heat the extra-virgin olive oil over medium-high heat. Add the sausage, brown and crumble 6 to 7 minutes. Add the broccoli and stir to combine. Serve!

Makes 4 servings

Count each serving as 3 proteins.

Tip- If you can't find bulk sausages, you can buy regular sausages and remove the casings.
