Salmon Chick Pea Salad
An easy, portable lunch salad.
Ingredients
1 can (170g) salmon or tuna, drained
1¼ cup chick peas, drained and rinsed
1 cup cherry tomatoes, chopped
1 sweet yellow pepper, half diced, half cut into rings
¼ cup Italian dressing
Preparation
Toss together the salmon, chick peas, tomatoes, diced pepper and dressing. Garnish with pepper rings. Serve on its own or over top of your favourite greens.
