Broccoli Mash

This delicious recipe was adapted from the Diet Doctor website, and it's a delicious alternative to mashed cauliflower as a side dish!    

Ingredients: 

  • 1½ lbs broccoli  

  • 4 tbsp fresh basil or fresh parsley, finely chopped (or 2 tbsp any dried herbs of your choice) 

  • 4 tbsp salted butter (or olive oil for a vegan version - add 1/4 tsp salt)

  • 1 garlic clove 

  • salt and pepper 

Directions:

Chop the broccoli into florets and peel and cut the stem into small pieces. Boil the broccoli in plenty of lightly salted water for a couple of minutes – just enough to retain a somewhat firm texture. Discard the water. Blend with the other ingredients in a food processor or use an immersion blender. Salt and pepper to taste. Serve hot! 

Exchanges:

Makes 4 servings. 

Count each serving as 2 fats (group 7).  Try sprinkling some cheddar or Parmesan cheese on top for added protein and delicious flavour!
