Sausage and Broccoli Skillet

An easy and tasty dinner!

Ingredients:

1 large head of broccoli

1 tablespoon extra-virgin olive oil

1 pound Italian hot or mild sausage, in crumbles or small pieces

Directions:

Cut the broccoli into bite-sized florets.

Bring 2 inches water to a boil in a high sided skillet. Add the broccoli or broccoli rabe and simmer for up to 10 minutes depending on how you like your broccoli cooked.

Drain.

Return skillet to the stove and heat the extra-virgin olive oil over medium-high heat. Add the sausage, brown and crumble 6 to 7 minutes. Add the broccoli and stir to combine. Serve!

Tip- If you can’t find bulk sausages, you can buy regular sausages and remove the casings.

Recipe Notes:

I buy Marc Angelo frozen Italian sausages from Food basics, you can get 1.7kg for $10.00.  I defrost 4 sausages overnight  (they come in packs of 4 in the large bag) and then crumble them out of the casings for this recipe.  I often sprinkle grated cheese over the top at the end!  A very easy recipe that you can adjust with any seasonings/additions you like.  Another version I do is I add 1 tbsp natural peanut butter, 2 tsp soy sauce, garlic and ginger, and create a peanut sauce at the end when everything is combined.  I add some water to thin out the sauce.  -Tiia
