Leftover Ham, Broccoli, and Mozzarella Bake
This is a delicious way to use leftover ham to make a satisfying low-carb dish for breakfast, lunch or dinner! Feel free to switch up the protein, veggies and cheese to make this dish your own.

Ingredients:
6 cups chopped broccoli (or any combo of free veggies)
2 cups diced ham (or any leftover meat, you could combine whatever you wish)
1/3 cup thinly sliced green onion (if you don’t have green onion, ¼ cup diced white or red onion)
1 cup mozzarella cheese (or combo of mozzarella & cheddar, with some Parmesan is good too)
10 eggs, beaten well
1 teaspoon Montreal steak spice (or any spice blend you like!)
Fresh-ground black pepper, to taste
Directions:
Preheat oven to 375 F and grease a 9x12” casserole dish
Cook broccoli just 2 minutes in boiling salted water.
Pour broccoli into a colander placed in the sink and let it drain well.
Dice up enough ham (or chicken, bacon, etc.) to make 2 cups, and slice 1/3 cup green onions. Measure one cup grated Mozzarella cheese.
In the greased casserole dish, layer the broccoli and then the ham/meat. Sprinkle the grated mozzarella and green onions over that.
Season to taste with Montreal Steak Spice or another all-purpose seasoning blend and fresh-ground black pepper.
Beat the eggs and pour them over the other ingredients.
Then use a fork to “stir” just until all the ingredients are coated with egg.
Bake at for 35-45 minutes or until the eggs are set and the top is lightly browned.

Makes 8 servings. Count each serving as: 3 proteins (group 6).
Note from Tiia: I cut this recipe in half since there's less people in my household, and I was trying to stretch the eggs. I used 1 cup shredded chicken (from legs I'd baked) + 2 strips crumbled bacon, and marble cheese. I used 2 cups broccoli and 1 cup diced bell pepper. I used a small, circular pyrex container and the cooking time was about 20 minutes.
Note from Dr. B: I used ham as the meat, and frozen beans as the vegetable, and also cut this recipe in half. I made it in the microwave - it took about 4-5 minutes in a glass container.
