Avocado Tuna Salad
Ingredients:
-15 oz tuna in oil, drained and flaked
-1 English cucumber
- sliced3 medium avocados peeled, pitted & sliced
-1 small red onion, thinly sliced
-¼ cup cilantro, chopped
-2 Tbsp lemon juice, freshly squeezed
-2 Tbsp extra virgin olive oil
-1 tsp sea salt or to taste
-⅛ tsp black pepper
Instructions:
• In a large salad bowl, combine sliced cucumber, sliced avocado, thinly sliced red onion, drained tuna, and cilantro.
• Drizzle salad ingredients with the lemon juice, olive oil, salt and black pepper (or season to taste).
• Toss to combine and serve.
Servings: 6 as a side salad
*count each serving as 2 proteins and 3 fats.
