Bell Pepper Nacho Boats
These would be a great hand around at a summer barbeque!
Ingredients:
-1 pound ground turkey (or your choice of meat)
-1 teaspoon chili powder
-1 teaspoon cumin
-½ teaspoon black pepper
-¼ teaspoon salt
-¾ cup salsa
-1 cup grated cheddar cheese
-3 bell peppers
Additional toppings:
-Sliced Jalapeno peppers (free)
-Diced avocado (¼ avocado = 1 fat)
-Greek yogurt (½ cup = 1 protein or 1 dairy)
-Sour cream (1 tablespoon = 1 fat)
-Sliced green onions (free).
Directions:
Remove seeds, core and membrane from the bell peppers, then slice each one into 6 vertical pieces. Set the sliced peppers aside.
Cook the ground meat over a medium-high heat, breaking it up as it cooks. Cook until the meat is cooked through. Drain off any fat
Preheat oven to 375 degrees.
Combine cooked meat with spices and salsa. Evenly distribute mixture into the bell pepper boats and top with cheese. Bake on a baking sheet for 10 minutes or until the cheese is melted and the peppers are hot.
Remove from the oven and add additional toppings as desired.
Makes 18 boats,
*count each boat as 1 protein.
