Balsamic Bacon Brussels Bites

These are delicious little bites that would be a perfect appetizer at your Christmas party!

Ingredients:

-12 large Brussels sprouts

-2 tbsp balsamic vinegar

-½ tsp dried thyme

-½ tsp ground black pepper

-½ tsp garlic powder

-5 or 6 slices of bacon

Method:

  • Pre-heat the oven to 400F (204C).Trim the ends of the Brussels sprouts, then halve them lengthwise.

  • In a bowl, combine the balsamic vinegar, thyme, pepper and garlic powder. Add the halved sprouts to this mixture and toss to coat thoroughly.

  • Lay down a slice of bacon and put a Brussels sprout about an inch from the end. Loosely wrap the bacon over the sprout and trim at the point where the bacon meets. Continue until all the Brussels sprouts are wrapped.

  • Lay the wrapped sprouts on a baking tray, keeping the cut ends of bacon under the sprout to secure it.

  • Bake 20 to 23 minutes for crisp bacon and perfectly roasted Brussels sprouts!

Makes 24 bites.

*Count 4 bites as 1 fat and 1 restricted vegetable.
