Crispy baked chicken with BBQ mayo

Ingredients:
? cup coconut flour
1 teaspoon garlic powder
1 teaspoon chili powder
¾ teaspoon salt
¼ teaspoon ground black pepper
2 lbs chicken thighs or legs, skin on
BBQ mayo:
1 cup mayonnaise
2 tablespoons tomato paste or sugar free BBQ sauce
1 tablespoon Dijon mustard
Salt and pepper

Instructions:
• Preheat the oven to 450°F (225°C). Combine coconut flour and spices in a plastic bag.
• Place the chicken in the bag and shake gently to properly cover with the flour and spices.
• Place the chicken skin side up in a greased baking dish. Bake in the oven for 40 minutes. Use a meat thermometer if you're unsure; the internal temperature in the thighs should be 165°F (74°C).
• While the chicken is baking, prepare the sauce by combining all ingredients.

Makes 4 servings; count each serving as 4 proteins and 2 fats. Increase fat count by one per tablespoon of BBQ sauce used.
