Cheesesteak Stuffed Peppers

Ingredients:
4 green or red bell peppers, halved with seeds removed
1 tablespoon olive oil
1 ½ pounds sirloin steak, sliced
1 large onion, sliced
16 ounces mushrooms, sliced
Salt and pepper
16 slices provolone cheese

Method:
• Preheat the oven to 325F. Place the peppers in a large baking dish and bake until tender, about 20 minutes.
• Meanwhile, in a large skillet over medium-high heat, heat oil. Add the steak and cook for about 1 minute per side. Set aside.
• Add onions and mushrooms to the skillet and season with salt and pepper. When softened, return the steak to the skillet and stir to combine.
• Place a slice of provolone in the bottom of the peppers and top with the steak mixture. Top with another piece of provolone and broil until melted and brown.
• Serve and enjoy!

Count each half pepper as 3 proteins and 1 fat.
