One Minute Muffin

These are grain free little snacks that can be made sweet or savoury depending on which flavours you decide to add. Once the muffins are cooked, you can eat them as they are or you can toast them.

Ingredients:
1 large egg
2 tsp coconut flour
Pinch baking soda
Pinch salt

Instructions:
Grease a ramekin dish with coconut oil or butter.
In a mug, mix all the ingredients together with a fork to ensure it is lump free.
Place the muffin dough in the greased ramekin and cook in the microwave on high for 1 minute. Alternatively, it can be baked in an oven, at 200C/400F for 12 minutes.
Cut in half and serve.

Makes one muffin. Count as 1 protein and 1 fat.

Try some of these variations:
Sweet muffins – add 1 tsp sweetener.
Nutty muffins – add 2 tsp nut butter and 1 tsp sweetener (Fat count increases by one).
Cinnamon muffins – add 1 tsp sweetener and 1 tsp cinnamon. When cooked, also add butter and sprinkle with sweetener and cinnamon (Fat count increases by one for each tsp of butter).
Cheesy muffins – add 2 tbsp grated cheese and 1 tsp chopped chives (Protein count increases by one for each ounce of cheese added).
Spinach and feta muffins – add 2 tbsp grated feta cheese and some chopped cooked spinach leaves (Protein count increases by one for each ounce of cheese added).
