Curried Lime Cauliflower Bites with Curry Mayo

Ingredients:
½ head cauliflower, cut into bite sized florets
1 teaspoon oil
Juice from ½ lime
1 teaspoon curry powder
¼ teaspoon cumin powder
¼ teaspoon coriander powder
¼ teaspoon turmeric
¼ teaspoon cayenne powder
¼ teaspoon sea salt
For the curry mayo:
¼ cup mayonnaise* (NOT Miracle Whip!)
1 teaspoon curry powder
¼ teaspoon cayenne powder
¼ teaspoon turmeric
? teaspoon sugar
A pinch of sea salt

Instructions:
? Preheat your oven to 425 degrees. Line a baking sheet with parchment paper.
? Place the cauliflower florets in a medium sized bowl and pour over the oil and lime juice and toss to coat.
? Combine all the remaining ingredients in a small bowl and mix them together. Pour the spices over the cauliflower and toss well so that each piece is evenly coated.
? Place the cauliflower on the prepared baking sheet and bake in the preheated oven for 30 minutes, turning halfway.
? While the cauliflower is baking, make the curry mayo. Combine all the curry mayo ingredients in a small bowl and mix them together well.
? Serve the cauliflower with the curry mayo on the side for dipping, a little squeeze of lime over top and a sprinkling of cilantro or parsley.

The cauliflower florets are a free food, and 1 tablespoon of the dip counts as 1 fat.
