Almond Crusted Fish
Ingredients:
4 fish fillets (about 4 ounces each)
? cup sliced almonds, coarsely chopped
2 tablespoons chopped fresh parsley
? teaspoon salt
? teaspoon paprika
2 teaspoons grated lemon zest
2 teaspoons fresh lemon juice
Method:
• Preheat the oven to 425F (220C). Line a baking pan with foil and lightly grease with oil.
• Arrange the fish in a single layer in the pan.
• In a small bowl, stir together the remaining ingredients, except the lemon juice.
• Sprinkle over the top of the fish. Using the back of a spoon, gently press the mixture so it adheres to the fish.
• Bake for 5 minutes, or until the fish flakes easily when tested with a fork.
• Drizzle with the lemon juice and serve!
Makes 4 servings; count each serving as 2 proteins and 1 fat.
