Cauliflower Mock Potato Salad

Ingredients:
1 large head cauliflower, cut into bite sized pieces
3 hardboiled eggs, chopped
3 tablespoons mayonnaise
3 tablespoons sour cream
¼ cup sweet pickle relish
1 tablespoon finely chopped onion
1 tablespoon mustard
1 teaspoon salt
¼ teaspoon ground black pepper

Directions:
Bring a pot of salted water to a boil over high heat. Add chopped cauliflower; cover and cook for 5 minutes. Drain and rinse under cold water to cool.
Combine cauliflower and all remaining ingredients. Chill for at least 30 minutes to allow flavours to blend.
When ready to serve, taste and add salt and pepper as desired.
Makes 6 servings; count each as ½ protein and 1 fat.
