Italian Sub Salad

Ingredients:
4 cups shredded lettuce (iceberg or romaine are good options)
2 Roma tomatoes, diced
¾ cup mixed olives, pitted
¼ red onion, sliced
¼ cup sliced banana peppers
6 ounces diced deli meats (pepperoni, salami etc.)

Vinaigrette:
½ cup olive oil
2 tablespoons red wine vinegar
1 tablespoon Italian seasoning
Pinch of salt
Fresh pepper to taste

Method:
• Whisk the ingredients for the dressing together and set aside.
• Toss all of the salad ingredients together and toss with dressing! Easy!

Makes six side salads; count each as 1 protein and 3 - 5 fats (depending on the amount of dressing you use: 1 tablespoon dressing = 1 fat).
