Meatloaf Cupcakes
Ingredients:
1 onion, diced finely
700g (1 ½ lb) ground beef/pork/chicken/turkey
2 eggs, lightly beaten
Salt and Pepper to taste
100g grated cheese
An example of flavourings:
2 slices bacon, diced
Handful fresh basil
Handful fresh parsley
½ C sundried tomatoes
2 tsp dried oregano
Method:
Mix the diced onion, meat, eggs, salt and pepper together.
Add your choice of seasonings and flavourings.
Mix all the ingredients together with your hands and place a small handful of the meatloaf mixture into muffin trays. Press gently, not too hard, otherwise they will turn into meatballs.
Cover with the grated cheese.
Cook at 350F (180C) for 30 mins, or until cooked through.
Makes 12 little meatloaves; count each as 2 proteins.
