Lettuce Wraps

Ingredients:

4 tsp olive oil
1 tbsp rice vinegar
1 tsp soy sauce
1 tsp sesame oil
½ tsp minced ginger (or a pinch of ground ginger)
½ tsp liquid honey
Salt and pepper
1 C chopped cooked chicken or whole small cooked shrimp
1 C halved or quartered cherry tomatoes
½ C chopped cucumber
1 carrot, grated
1 green onion, sliced
8 leaves Boston lettuce

Method:
• In a large bowl, whisk together oil, vinegar, soy sauce, sesame oil, ginger and honey.
• Season to taste with salt and pepper.
• Add chicken, tomatoes, cucumber, carrot and green onion; toss to coat.
• Spoon chicken mixture in the centre of each lettuce leaf, dividing evenly.
• Fold in sides of lettuce leaves and roll up from the bottom.

Makes 8 wraps; count 2 wraps as 1 serving.
Count each serving as 1 protein and 1 fat.
