Stuffed Breakfast Peppers

Ingredients:
2 Bell peppers – your choice of colour
4 eggs
1 C white mushrooms
1 C broccoli
¼ tsp cayenne pepper
Salt and pepper to taste
Directions:
• Preheat the oven to 375 degrees Fahrenheit.
• Dice the mushrooms and broccoli.
• In a medium sized bowl, mix eggs, salt, pepper, cayenne pepper and diced vegetables.
• Cut peppers into equal halves and remove stalk and seeds.
• Pour a quarter of the egg and vegetable mix into each half pepper, adding more vegetables to the top to fill in any empty space.
• Place on a baking sheet and cook for approximately 35 minutes, or until the eggs are cooked to your liking.
• Serve!
