Lean Chef Salad

This salad is packed full of protein and makes a great dinner!

Ingredients

4 cups (1 L) torn romaine lettuce, stems removed, lightly packed
1 green onion, sliced
8 cherry tomatoes, halved
1/3 cup (75mL) fat-free Italian dressing
ground pepper, a sprinkle
1/2 cup (125mL) diced medium cheddar cheese
2 ounces (85g) no-fat deli ham slices, cut into thin strips
2 ounces (85g) lean deli smoked turkey breast slices, cut into thin strips
2 large, hard-cooked eggs, chopped
2 tablespoons (25mL) fat-free Italian dressing (optional)

Instructions

Place first 3 ingredients into a large bowl and drizzle with first amount of dressing. Sprinkle with pepper and toss well. Arrange on 2 serving plates.

Arrange next 3 ingredients over lettuce mixture, and sprinkle chopped eggs over top. Serve with the second amount of dressing on the side.

Notes

Makes 2 servings. Count each serving as 3 protein (group 6).
