Spicy Thai Ground Beef

Ingredients:
1 lb lean ground beef
1 tbsp soy sauce
1 tbsp grated ginger
2 tbsp corn starch
½ tsp black pepper
3 tbsp olive oil
½ C onion

5 cloves garlic
2 small hot chillies
4 tbsp red curry paste
1 lb green beans
1 sweet red pepper, diced
2 tbsp fish sauce
1 C fresh basil
2 tbsp lime juice

Method:
• Mix beef, soy sauce, cornstarch, ginger and pepper and set aside.
• In a large skillet heat oil and fry the onions for 2 minutes.
• Add the garlic and fry for 1 minute.
• Add the chillies and curry paste and stir until fragrant.
• Add the beef and cook for 5 minutes.
• Add beans, sweet red pepper and fish sauce and cook for 2 minutes.
• Pour in ¼ C water, cover and cook stirring often.
• Add a little more water if the mixture is sticking.
• Cook for 10 minutes, uncovered, stirring constantly. Fry until dry.
• Add the basil and the lime juice just before serving.

Makes 4 servings; count each serving as 3 proteins.
