Kale Soup with Sausage and Mushroom

Ingredients:
2 cans chicken broth
1 bunch fresh kale, cut into bite sized pieces
4 links spicy sausage, cooked, casings removed and sliced
1 package of sliced mushrooms
2 cloves garlic
Salt and pepper

Method:
o Place both cans of chicken broth in a large pot along with two cans worth of water.
o Bring to a boil over a medium heat.
o Add the kale, sausage, mushrooms and garlic.
o Simmer covered over low heat for about an hour.
o Season to taste with salt and pepper.

Makes 6 servings; count each serving as 1 protein.
