Marinated Chickpea Salad

Ingredients:
3 tbsp lemon juice
2 tbsp olive oil
¾ tsp ground coriander
¼ tsp pepper
Pinch each cayenne pepper and salt
1 can (19oz/540ml) chickpeas, drained and rinsed
1 baby cucumber, quartered lengthwise and sliced
¼ C diced red onion
¼ C chopped fresh cilantro
Method:
In bowl, whisk together lemon juice, oil, coriander, pepper, cayenne pepper and salt. Add chickpeas, cucumber and onion; stir to combine. Cover and refrigerate for 2 hours. Stir in cilantro just before serving.
Makes 4 servings; count each serving as 1 ½ proteins and 1 fat.
